If I'm being entirely honest with you, I don't actually post too often on this blog, but you know if you want to follow me go for it. When I do post though, I often post recipes or random things like life updates or whatever. It's honestly just a hobby blog, anything that I'm currently into might get posted here. Recipe: Dark Chocolate Dipped Puffed Rice Crispy Treats

Yum! Who doesn't love rice crispy treats? The biggest issue I have with these delicious delectables is how unfilling they are- I could eat like three in a row and still be ready to munch on more. So I was given the idea by Chrissy Fink to use puffed rice instead of the regular cereal. This puffed rice is much more filling, I'm full after eating only one. And to make the flavor even of the treat even better, I dipped these treats into dark chocolate. 
While the puffed rice treats isn't quite as crispy as the regular rice crispy treats are, you can barely notice it over the tastefulness of the rest of the ingredients. Be aware that there are still marshmallows in this recipe- this is not really a healthy recipe. More of a healthier alternative. But not healthy. It's definitely more of a treat. 
This recipe (my version) calls for tempered chocolate. If you don't know what tempered chocolate is, it's chocolate melted at the right temperature so that it will harden at room temperature. The easiest way to do this is to microwave the chocolate for 10 seconds, stirring in between each interval, until the chocolate is just melted. Well, that's the easiest way, I can write another post on chocolate later. 

Recipe: 
6 cups puffed rice 
1 bag marshmallows 
3 T coconut oil
1 1/2 cups dark chocolate, tempered 

Instructions: 
1) in a large pot, melt marshmallows and coconut oil over medium heat, stirring constantly
2) once the mixture is completely melted, mix in the puffed rice
3) mix until homogenous 
4) pour into a 13x9 pan lined with parchment paper 
5) flatten out the top until the mixture is even 
6) pour tempered dark chocolate over the top (this will be turned into the base when you cut up the treat) 
7) allow to sit for at least two hours before removing the treat from the pan and cutting the bars up 
8) store in an airtight container and enjoy
